Meat and Rice Rissoles

Spring is in the air and the BBQ covers have been lifted. Here's a favourite for the family with fresh healthy ingredients.

Yields4 ServingsDifficultyBeginner
 500 g organic beef or lamb, minced
 1 onion, finely chopped
 1 small carrot, grated
 1 small zucchini, grated
 1 cup cooked rice
 1 organic free-range egg
 1⁄4 cup rice flour
 1/8 tsp freshly ground Changing Habits Pepper
 Ghee or Coconut Oil for cooking

Mix all ingredients, except oil, together in a large bowl

Divide into portions using floured hands and form into rissoles

Heat a large frying pan on medium heat.

Melt the ghee or coconut oil and add the patties evenly (do not overcrowd) and cook on both sides until golden.

Repeat until all of the mixture has been used.

Suggested Serving: Serve with fresh salad, steamed vege or roasted vegetables.
