Banana and Date Puddings with a Caramel Sauce

A healthier alternative to the average sticky date pudding! A perfect, decadent treat for the colder months of the year. Best served warm, but also delicious cold.

Ingredients
 3 over ripe bananas mashed
 2 eggs
 1/4 cup coconut oil melted
 2/3 cup Changing Habits Dates chopped finely
 1 tsp vanilla
 1/2 tsp baking soda
 1/2 tsp baking powder
Caramel sauce
 1 tbsp butter or ghee
 300 ml cream
 1 tsp vanilla essence
Directions

Preheat oven to 180 degrees Celsius and line muffin trays with baking paper (it should make 8).

In a bowl, mash the banana and stir through the rapadura sugar, eggs, coconut oil, dates and vanilla. Mix well.

Sift in the flour, baking soda, baking powder and cinnamon. Mix well.

Spoon the mixture into the muffin tray and bake for approximately 15-20 minutes, leaving them a little soft on the inside.

While the puddings are in the oven, start on the sauce.

Add all sauce ingredients in a pot and cook over a high heat, whisking continuously until the sauce thickens.

Remove from heat and pour straight over the puddings as they come out of the oven.

    Good quality, natural without all the nasties is what I like.
    I can tell the difference between organic and items with added chemicals.
    My palate feels clear and not leave a pastie taste.

    Hi, can I replace coconut oil with another oil?. I already have high cholesterol.

      Hi Elizabeth, you could replace it with olive oil if you like. Or even swap the oil for stewed apple or coconut yoghurt, although we haven’t tested these with this recipe, but they work as great substitutes in lots of recipes.
